The chef chose an excellent Pecorino cheese from Sardinia to start the menu. This cheese is made with wild Sardinian sheep’s milk, from the heart of the Mediterranean, and served with croutons.
- First Course -
Mezzi paccheri pasta with fresh tomatoes, capers, breadcrumbs and almonds is a very "Mediterranean" course.
The featured ingredients (capers, almonds and tomatoes), are common in Southern Italy and from the islands. The so called paccheri is a traditional pasta from Campania, particularly from Naples. What makes this dish so yummy is the combined taste of the pasta and the sauce that accompanies it.
- Second Course -
Gattò potatoes with ham and cheese
The “Gattò” potato shares its origin with two regions of southern Italy, Campania and Sicily. The chef makes the dough with potatoes, and prepares it with a combination of italian ham and cheese, which then melts to a state of creamy perfection.
- Side dish -
Raw cauliflower with lemon and ginger
The Chef adds a magical touch of ginger and lemon to the cauliflower to bring out the taste of this healthy vegetable.
- Dessert-
Almonds Semifreddo
A first class dessert based on a soft ice cream with almonds and biscuits
Recommended wine
A white wine such as Vermentino, a southern Italian Rosato or even a red Sangiovese.
