The style of pouring the wine
When you host a party at home it is better not rush to fill the "empty glass" of your guests like the sommelier or the maitre at the restaurant. Today, unlike the past, due to different eating habits or to respect special diets that guests follow, it is more appropriate to leave the bottle in the center table so that everyone can easily help himself/herself.
Of course, you have to pour the wine if your guests specifically asked for it.
Wine should never be poured over what we call the "belly" of the glass, its widest part. This measure goes back to the time when the country doctors ordered to their sick patients "two fingers of good wine" to recover from the disease. Until the middle of 1900, the refined and quality wine was still rare and, when wine was available in farmhouses was only recommended for therapeutic purposes and in limited quantities.
